Sesame Lamb Kebabs With Cauliflower
- 3 tablespoons plain yogurt
- 1 teaspoon lemon juice
- 1 teaspoon milk
- 1 teaspoon white balsamic vinegar
- 1 clove garlic minced
- 1 tablespoon fresh mint leaves chopped
- 3 1/2 ounces spinach
- 1 cauliflower cut into florets
- 1 pound ground lamb
- 2 tablespoons breadcrumbs
- 1 teaspoon ground cumin
- 1 egg yolk
- 2 red onions cut into wedges
- 1 tablespoon oil
- 2 teaspoons sesame seeds
- 1 head romaine lettuce torn into pieces

- Mix together yogurt, lemon juice, milk, vinegar, garlic and mint. Season then transfer to a serving dish. Set aside.
- Place spinach in a saucepan and drizzle with a little water. Cook for 2 mins, or until wilted. Drain and chop. Cook cauliflower in boiling salted water for 3-4 mins, until softened.
- Combine lamb, spinach, breadcrumbs, cumin and egg yolk. Season. Shape into 24 small ovals. Thread 3 meatballs and 2 onion wedges each onto 9 skewers.
- Heat oil in a large frying pan. Sear kebabs for 8 mins, or until cooked through, turning once or twice. Sprinkle with sesame seeds.
- Combine lettuce and cauliflower on serving plates. Arrange skewers on top. Serve with mint dressing and warmed bread.
