Reduced Calorie Bread Pudding
- 8 slices whole wheat bread crumbled
- 8 egg whites I used Egg Beaters whites from the carton; the amount depends on how moist you want it
- 1 cup skim milk
- 1 teaspoon cinnamon
- 2 teaspoons vanilla extract
- 1 tablespoon brown sugar
- 2 tablespoons stevia
- 1 teaspoon margarine melted
- berries Preferred, if desired, I used blueberries
- powdered sugar if desired
- Lay the crumbled bread in the bottom of a greased casserole dish. Size doesn't really matter; it'll just be puffy either way
- Add all ingredients in bowl except margarine and berries if you're using them. Whisk together.
- Pour mixture over bread, making sure to cover everything evenly.
- Squish the mixture in the dish together with your hands.
- Melt the margarine in a small bowl in the microwave for about 10 seconds. Time usually depends on your microwave.
- Pour the margarine over the mixture. Add your preferred berries to the mixture if using them. Squish together again.
- Bake for 55 minutes at 345 degrees Fahrenheit.
- Wait to cool and sprinkle powdered sugar on top if desired. Serve with low fat ice cream or whipped cream (or both!)
