Almond Crusted Chicken
- 3 chicken breast halves skinless, boneless, and thinly sliced
- 2 tablespoons olive oil
- 1/4 cup Parmesan cheese grated
- 1/4 cup almonds coarsely chopped
- 2 tablespoons almonds ground
- 2 tablespoons whole wheat flour
- 2 tablespoons whole wheat breadcrumbs
- 1/2 teaspoon garlic powder
- ground black pepper
- salt
- cooking oil spray
- Cover the chicken with olive oil.
- Mix the rest of the ingredients together: Parmesan cheese, almonds, flour, breadcrumbs, garlic powder, and pepper and salt to taste. Cover the chicken with this mixture.
- Heat a skillet sprayed with cooking oil. Add the chicken and cook until golden brown on both sides and the chicken is cooked on the inside.
- Serve immediately.
