Moroccan Chicken With Olives

  1. Heat the olive oil and butter in a large skillet on medium-high heat. Add the chicken thighs and cook for 10 mins, turning occasionally, until golden brown.
  2. Add the onion, garlic, lemon slices, honey and spices with 1 cup water. Bring to a boil. Reduce heat to low; cover and simmer for 15 mins. Add olives. Season with freshly ground black pepper.
  3. Simmer, uncovered, for 10 mins until the chicken is cooked through. Garnish with a sprinkling of ground cumin and parsley leaves. Serve with couscous.
