Moroccan Chicken With Olives
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 1/4 pounds chicken thighs
- 2 onions finely chopped
- 2 cloves cloves crushed
- 2 lemons small, sliced
- 1 tablespoon honey
- 1 teaspoon ground cumin plus additional, to garnish
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 pinch saffron or 1/2 tsp ground turmeric
- 1/3 cup pitted olives mixed green and black
- parsley leaves to garnish
- couscous to serve
- Heat the olive oil and butter in a large skillet on medium-high heat. Add the chicken thighs and cook for 10 mins, turning occasionally, until golden brown.
- Add the onion, garlic, lemon slices, honey and spices with 1 cup water. Bring to a boil. Reduce heat to low; cover and simmer for 15 mins. Add olives. Season with freshly ground black pepper.
- Simmer, uncovered, for 10 mins until the chicken is cooked through. Garnish with a sprinkling of ground cumin and parsley leaves. Serve with couscous.
