Turkey Balls
- 5 c. day old 1-inch bread cubes
- 3/4 c. diced celery
- 1/2 c. chopped walnuts
- 2 Tbsp. minced onion
- 1/2 tsp. salt
- 1/2 tsp. poultry seasoning
- 1/8 tsp. pepper
- 1 1/2 c. chopped, cooked turkey or chicken
- 1/2 c. melted butter or margarine
- 1/4 c. hot chicken broth, turkey broth or water
- 3 Tbsp. coarsely chopped walnuts
- 1 tsp. butter or margarine
- hot leftover gravy or 1 can cream of chicken soup plus 1/2 c. milk
- Heat oven to 375u0b0.
- Combine bread, celery, 1/2 cup walnuts, onion, salt, poultry seasoning, pepper and turkey.
- Add 1/2 cup melted butter and enough broth to moisten.
- Shape into 1-inch balls.
- Place in greased shallow pan.
- Bake 30 minutes or until crisp.
- About 10 minutes before serving, put walnuts (3 tablespoons) in small shallow pan.
- Dot with 1 teaspoon butter and toast in oven with turkey balls, stirring once.
- Serve balls with gravy; garnish with walnuts.
