Apple Cheese Bread
- 1/2 c. butter or margarine, softened
- 3/4 c. sugar
- 2 eggs
- 1 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. ground ginger
- 1 c. grated unpeeled Red Delicious apples
- 1/2 c. sharp Cheddar cheese
- 1/3 c. chopped pecans (optional)
- Cream butter with sugar until fluffy.
- Add eggs, 1 at a time, beating after each addition.
- Sift flour, baking powder, soda, salt and ginger together.
- Add 1/3 of dry ingredients to egg mixture; stir in apples, cheese and pecans.
- Add remaining dry ingredients and mix thoroughly.
- Pour batter into well-buttered 9 x 5 x 3-inch loaf pan.
- Bake at 350u0b0 for 1 hour or until wooden pick inserted near center comes out clean.
- Cool in pan 10 minutes; remove and cool on wire rack.
- Serve warm or cold.
