Salty Dried Fruit Cookies

  1. Preheat the oven to 180 Celsius.
  2. Beat the sugar, butter, shortening, egg, and vanilla together. Add the flour and the fruit. Mix.
  3. Line baking sheets with parchment paper and place balls of dough approximately 1 teaspoon in size, onto the baking sheet.
  4. Grease the bottom of a heavy drinking glass with vegetable oil, dip into the extra mascabado sugar, and flatten each cookie.
  5. Bake for 10 minutes, until golden around the edges. Remove from the oven and cool on a rack.
