Salty Dried Fruit Cookies
- 1/3 cup muscovado sugar may substitute dark brown sugar
- 100 grams unsalted butter softened
- 1/4 cup vegetable shortening
- 1 egg
- 1 teaspoon vanilla
- 1 cup self-rising flour
- 1/2 cup fruit dry salted, finely chopped
- 1/2 cup sugar additional mascobado
- vegetable oil approximately 1/4 cup
- Preheat the oven to 180 Celsius.
- Beat the sugar, butter, shortening, egg, and vanilla together. Add the flour and the fruit. Mix.
- Line baking sheets with parchment paper and place balls of dough approximately 1 teaspoon in size, onto the baking sheet.
- Grease the bottom of a heavy drinking glass with vegetable oil, dip into the extra mascabado sugar, and flatten each cookie.
- Bake for 10 minutes, until golden around the edges. Remove from the oven and cool on a rack.
