Madeleines

  1. Preheat oven to 375. Melt the butter in a saucepan over medium heat. Brush a little of the melted butter in the molds of a madeleine plaque. Reserve the remainder and let cool to lukewarm.
  2. Sift the flour, baking powder, and salt into a bowl. Combine the egg, lemon zest, orange-flower water, and granulated sugar and beat lightly.
  3. Stir into the flour mixture and beat for a few seconds longer until well combined. Add the reserved butter and beat just long enough to incorporate thoroughly without overmixing.
  4. Spoon the batter into the molds of the prepared plaque, filling each one half full. Place on the middle shelf of the oven and back for 12-15 minutes, until golden and starting to brown at the edges.
  5. Unmold and place on a rack. Dust with confectioners' sugar and serve while still warm. Makes 12 3-inch madeleines.
