Clean Eating Ground Turkey Mix With A Kick

  1. In a large skillet ( I use a Black and Decker 12" Electric): Saute mushrooms, in 1 tablespoon EVOO and the juice from 1/2 lime until tender. Can substitute wine for lime juice. I sprinkle about 1/2 teaspoon of sea salt on the mushrooms.. Remove mushrooms from skillet and set aside. About 7-8 minutes
  2. In the same skillet, saute onions in 2 tablespoons EVOO until tender and translucent/browned. About 5 minutes
  3. Add the diced bell peppers to the onion and cook approximately 5 minutes more.
  4. Add the ground turkey, chipotle powder, garlic powder and sea salt to the skillet and brown while mixing/stirring the vegetables into the turkey. This is done while breaking the turkey into crumbles. About 5 minutes.
  5. Once the turkey is lightly browned add the mushrooms, cilantro and tomatoes. Cook until turkey is fully cooked. About 10-12 minutes longer or until turkey reaches 165 degrees F measured with a meat thermometer.
  6. I sometimes serve this over steamed rice but you can eat it on its own. Enjoy!
