Clean Eating Ground Turkey Mix With A Kick
- 2 1/2 pounds lean ground turkey I use the Jennie-O package from Sam's Club
- 1 green bell pepper diced, about 1 & 1/4 cup
- 1 red bell pepper diced, about 1 & 1/4 cup
- 1 cup diced yellow onion finely
- 1 1/2 cups diced tomatoes I cheat and use 14.5 oz. can of Del Monte Petite Diced Tomatoes with Chipotle and I use the juice
- 4 cups cilantro leaves diced fresh
- 2 cups baby bellas sliced
- 3 tablespoons EVOO
- 1 tablespoon chipotle powder or to taste
- 1/2 teaspoon garlic powder or 1 clove garlic finely diced OR to taste
- 2 1/2 teaspoons sea salt or kosher, or to taste
- 1 lime optional
- ground pepper optional
- In a large skillet ( I use a Black and Decker 12" Electric): Saute mushrooms, in 1 tablespoon EVOO and the juice from 1/2 lime until tender. Can substitute wine for lime juice. I sprinkle about 1/2 teaspoon of sea salt on the mushrooms.. Remove mushrooms from skillet and set aside. About 7-8 minutes
- In the same skillet, saute onions in 2 tablespoons EVOO until tender and translucent/browned. About 5 minutes
- Add the diced bell peppers to the onion and cook approximately 5 minutes more.
- Add the ground turkey, chipotle powder, garlic powder and sea salt to the skillet and brown while mixing/stirring the vegetables into the turkey. This is done while breaking the turkey into crumbles. About 5 minutes.
- Once the turkey is lightly browned add the mushrooms, cilantro and tomatoes. Cook until turkey is fully cooked. About 10-12 minutes longer or until turkey reaches 165 degrees F measured with a meat thermometer.
- I sometimes serve this over steamed rice but you can eat it on its own. Enjoy!
