Grain-Free Chocolate Chip Cookies
- 2 cups almond flour organic
- 2 tablespoons coconut flour organic
- 1/2 teaspoon baking soda non-aluminum
- 1/2 teaspoon Himalayan salt pink
- 6 tablespoons grass-fed butter vegan or organic, or organic coconut oil
- 1/4 cup cane sugar organic evaporated, or organic raw honey for non-vegan
- 2 teaspoons vanilla extract organic
- 1/2 cup vegan chocolate chips Enjoy Life Brand
- Combine almond flour, coconut flour, baking soda and pink himalayan salt in a medium bowl and stir until well combined.
- Melt butter/oil of your choice (vegan butter, organic grass-fed butter or organic coconut oil).
- Wisk butter/oil, cane sugar (or raw honey) and vanilla in a small mixing bowl.
- Pour butter mixture into the dry mixture and stir until well combined until a soft dough forms.
- Gently stir in the chocolate chips.
- Scoop into small balls onto a baking sheet and then press the balls down flat.
- Bake at 350 degrees for 12 minutes or until just golden brown around the edges.
- Cool for 5 minutes before removing from the baking sheet.
