Eggplant Sandwich Casserole*
- 1 eggplant
- 1 lb. ground beef
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. pepper
- 1/4 tsp. m.s.g.
- 1/2 tsp. salt
- 2 eggs
- 2 small cans tomato sauce
- salt and pepper
- oregano
- Swiss or Mozzarella cheese
- 1/4 tsp. oregano
- Wash and slice eggplant 1/4 inch thick (unpeeled).
- Make sandwich style a slice of eggplant, meat mixture patty and another slice of eggplant.
- Patties made of beef, onion, Parmesan cheese, pepper, m.s.g., oregano, salt and eggs.
- Brown both sides of your eggplant "sandwich" in small amount of fat, placing browned eggplant sandwiches into casserole dish, fitting as close together as you can.
- Mix tomato sauce and 1 can water, salt, pepper, oregano (to taste) and pour over "sandwiches."
- Place Swiss or Mozzarella cheese slices on top and bake 1 hour at 325u0b0.
