Curry Rice
- 1 1/2 lb. ground beef
- 1 c. stewed tomatoes, chopped
- 3 Tbsp. curry powder
- 1 tsp. paprika
- 1 Tbsp. chili powder
- 1/2 c. onion, chopped
- 1 clove garlic, chopped
- 2 small cans tomato sauce
- salt and pepper to taste
- dash of cayenne pepper
- 3 c. cooked instant rice
- 1 small can green chilies
- Tabasco sauce to taste
- crushed red pepper to taste
- In a large skillet brown ground beef, onions, garlic, salt and pepper; drain off excess fat.
- Return to heat and add curry powder, paprika, cayenne pepper and chili powder; stir well, blending seasonings with meat.
- Add tomatoes and tomato sauce; rinse cans of tomato sauce with 1/2 can of water and pour into mixture.
- If you like add additional seasonings to taste at this time.
- Prepare rice according to package directions.
- Simmer curry mixture for 30 minutes; if mixture seems a little thick, add small amounts of water until desired consistency.
- Serve over rice with crackers.
