Lebanese Green Peas With Rice

  1. Wash green peas in clean water, and set aside
  2. In a pot, add the butter, olive oil, and garlic and stir for 1 minute
  3. Add onions and a pinch of salt and stir until translucent for about 5 minutes
  4. Add the carrots and stir. Leave for 10 minutes in a low heat and cover the pot
  5. Add the meat, cube chicken , salt, pepper, cinnamon and nutmeg (very little nutmeg). Stir to combine, leave for around 10 minutes covered, stir occasionally.
  6. Meanwhile, combine in a bowl the tomato juice, tomato paste, sugar. Add the mixture to the pot, stir to combine, cover and let simmer for around 20 minutes
  7. Add the lemon juice. Stir, cover and let simmer for five minutes.
  8. Serve with rice or quinoa
