Lebanese Green Peas With Rice
- 3 cups frozen green peas
- 7 ounces ground beef
- 1 onion medium, minced
- 3 garlic cloves finely chopped
- 2 large carrots chopped in cubes or circles
- 1 bottle tomato juice
- 1 can tomato paste
- 1 tablespoon sugar
- 1 pinch salt pepper, cinnamon, and nutmeg
- 1 cube chicken broth
- 1 juice lemon -
- 11/16 tablespoon butter
- 2 tablespoons olive oil
- Wash green peas in clean water, and set aside
- In a pot, add the butter, olive oil, and garlic and stir for 1 minute
- Add onions and a pinch of salt and stir until translucent for about 5 minutes
- Add the carrots and stir. Leave for 10 minutes in a low heat and cover the pot
- Add the meat, cube chicken , salt, pepper, cinnamon and nutmeg (very little nutmeg). Stir to combine, leave for around 10 minutes covered, stir occasionally.
- Meanwhile, combine in a bowl the tomato juice, tomato paste, sugar. Add the mixture to the pot, stir to combine, cover and let simmer for around 20 minutes
- Add the lemon juice. Stir, cover and let simmer for five minutes.
- Serve with rice or quinoa
