Black Bean Tacos

  1. Melt I Can't Believe It's Not Butter!(R) It's Vegan in large nonstick skillet over medium-high heat and cook zucchini, red pepper, onion, chili powder, garlic and salt, stirring occasionally, until vegetables are tender, about 5 minutes.
  2. Stir in beans and cook until heated through, about 2 minutes. Stir in cilantro.
  3. Spoon bean mixture into tortillas. Top with lettuce and serve with lime wedges.
  4. Tip: Serve with chopped avocado, shredded vegan cheese and salsa if desired.
