Oatmeal Chocolate Chip Cake
- 1 3/4 c. boiling water
- 1 c. uncooked oatmeal
- 1 c. tightly packed brown sugar
- 1 c. granulated sugar
- 1/2 c. margarine
- 2 large or 3 small eggs
- 1 3/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbsp. cocoa
- 1 (12 oz.) pkg. chocolate chips
- 3/4 c. chopped nuts (optional)
- Pour boiling water over oatmeal.
- Let stand 10 minutes.
- Add both sugars and margarine.
- Stir until melted.
- Add eggs and mix well.
- Sift dry ingredients together and add to sugar mixture. Mix well.
- Add about half of the chocolate chips and nuts.
- Pour batter into greased 9 x 13-inch pan.
- Sprinkle nuts and rest of chips on top.
- Bake 40 minutes in a 350u0b0 oven.
