Hearty Cowboy Casserole
- 2 tablespoons olive oil
- 1 1/4 pounds pork neck roughly diced
- 1 pound potatoes peeled and cut into wedges
- 1 onion peeled and finely diced
- 3 bell peppers 1 red, 1 green,1 yellow, diced
- 15 ounces baked beans in tomato sauce
- 3/4 cup steak sauce
- 2/3 cup creme fraiche or sour cream
- 1/4 pound gouda cheese grated
- Preheat the oven to 400u0b0F. Heat the oil in a large frying pan and saute pork for 5 mins. Add the potatoes, onion, peppers, beans and 2/3 of the steak sauce. Bring to a boil, season and remove from the heat. Transfer to a large greased baking dish and spread creme fraiche (or sour cream, if using) and grated cheese over top. Bake for 30-45 mins and serve with the remaining steak sauce.
