Apple Crumble Muffins
- 6 tablespoons margarine reduced-fat
- 1/3 cup brown sugar + 1 tbsp
- 1 egg
- 1 cup self-rising flour sifted + 2 tbsp
- 1 Granny Smith apple large, peeled, cored, chopped into small chunks
- 1/4 cup skim milk
- 2/3 cup rolled oats
- 1 tablespoon desiccated coconut
- 1/2 teaspoon pumpkin pie spice
- heavy cream to serve
- Preheat oven to 350u0b0F. Lightly grease a 6-cup muffin pan with oil.
- Cream margarine and 1/3 cup sugar until light and fluffy. Add egg, beating well. Fold in flour, apple and milk until just combined. Transfer to prepared pan.
- Combine oats, coconut, 1 tbsp sugar and pumpkin pie spice. Sprinkle evenly over muffin batter and bake for 15-20 mins, or until a skewer inserted in the center comes out clean. Let cool for 5 mins in pan. Serve warm, drizzled with heavy cream.
