Panettone
- 1 2/3 cups wheat flour regular
- 5/8 cup semolina
- 1 teaspoon mushroom powder
- 3 eggs
- water A trickle of
- 1/2 onion
- 5/8 cup pumpkin
- extra-virgin olive oil
- 2 white sausages
- pear jam 2 tblsps.
- pepper Salt
- dried mushrooms Some, porcini
- extra-virgin olive oil
- 1 piece bacon non smoked
- 1/2 onion
- 3 garlic cloves
- salt
- Parmesan
- pepper
- Tip: For the yeast, prepare yeast one day before baking day.
- Dissolve yeast in water. Place flour, sugar, and water with yeast in a bowl.
- Stir well and cover with a cotton cloth.
- Let stand overnight.
- For the dough, lightly beat eggs and add all ingredients, except for those used for stuffing.
- Use an electric mixer or knead by hand for about 30 minutes.
- Shape dough into a ball and place in a lightly oiled bowl.
- Cover with a cotton cloth and let rise until doubled in volume.
- On a lightly floured work surface, use a rolling pin to stretch dough and roll out.
- Add remaining filling ingredients.
- Divide dough and shape into balls.
- Size of dough balls depends on size of baking sheets.
- Let rise again.
- When dough balls have doubled in size, lightly brush the surface with egg wash and bake in a preheated oven at 180u0b0C (approximately 350u0b0F) for about 40 minutes.
