Swiss Cheese And Onion Soup

  1. Heat 2 tablespoons butter in saucepan.
  2. Add garlic, onion, mustard and salt.
  3. Saute until tender.
  4. Add water.
  5. Cover and simmer over low heat.
  6. In a separate saucepan melt remaining 3 tablespoons butter.
  7. Whisk in 3 tablespoons flour and cook, whisking over low heat 1 minute.
  8. Slap a waffle (heat absorber) under the pan.
  9. Add milk; cook whisking until uniform and thick, 5 to 8 minutes.
  10. Add pepper, tamari, Tabasco and Worchestershire, horseradish, sherry, cheese and onions.
  11. Cook over low heat 8 to 10 minutes.
