Spiced Savoy Cabbage With Raisins And Walnuts
- 2 tablespoons sunflower oil
- 1 green cabbage small
- 1 red chilli deseeded and chopped
- 4 1/8 tablespoons fresh root ginger grated
- 1/2 teaspoon ground cumin
- 1/4 teaspoon asafoetida
- 1 teaspoon fenugreek ground
- 1/2 teaspoon ground cinnamon
- 2 teaspoons ground turmeric
- 1 cup walnut halves
- 1 tablespoon brown sugar
- 1 11/16 cups coconut milk
- 2 tablespoons lemon juice
- 1/2 cup sultanas
- Heat the oil in a large saucepan over medium heat. Add the chile pepper, ginger, turmeric, cinnamon and cumin and cook, stirring constantly, for 1-2 mins until fragrant. Mix in the brown sugar, walnuts and raisins and cook, stirring, for 1 min.
- Add the cabbage and salt and cook, stirring, for 2 mins. Add 1 1/4 cups water and the coconut milk and bring to a boil. Reduce heat, cover and simmer for 10-15 mins, stirring occasionally, until the cabbage is tender. Stir in the lemon juice and serve.
