Chinese Lettuce Wraps
- 2 tablespoons fresh ginger grated
- 2 tablespoons rice wine vinegar
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1/2 teaspoon cornstarch
- non-stick cooking spray
- 2 cups carrots pre-grated
- 1/4 cup onions pre-cut chopped
- 1 cup snow pea pods fresh, thinly sliced lengthwise
- 2 skinless boneless chicken breasts cooked and cut into thin strips, about 10 ounces
- 12 butter lettuce leaves
- In a bowl, mix ginger, vinegar, soy sauce, honey and cornstarch. Coat a non-stick skillet with cooking spray and place on medium heat.
