Oatmeal Raspberry Bars
- 1 1/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt I used 1/2 tsp.
- 1 stick butter at room temp.
- 1 egg
- 1 cup light brown sugar
- 1 teaspoon vanilla extract I used 1/2 tsp. of almond
- 2 cups old-fashioned rolled oats divided
- 1 cup raspberry jam I used the Smuckers low sugar. You can really taste the
- Preheat the oven to 350F. Grease or spray a 9x9 inch square pan.
- In a medium bowl, Whisk together the flour, baking Soda, and salt. Set aside.
- In a large bowl, Beat the butter and sugar together at medium speed until light and fluffy (2-3 minutes ).
- Add the vanilla and egg and continue to beat until well blended.
- Slowly add the flour mixture and mix till everything is combined.
- The dough will be very thick.
- With a large wooden spoon, stir in 1 3/4 cups of the oatmeal. I used my hands to make sure the oats were really incorporated into the dough.
- Press about 2/3 of the dough into prepared pan.
- Spread the jam over the base. Try not to get too close to the edges of the pan or else it will burn.
- Add the remaining 1/4 cup of oats to the dough in the bowl and mix well. Crumble the mixture over the jam. Bake for 25-30 minutes or when the oats begin to turn a deeper shade of gold.
- Remove from oven and cool completely before serving.
