Oatmeal Raspberry Bars

  1. Preheat the oven to 350F. Grease or spray a 9x9 inch square pan.
  2. In a medium bowl, Whisk together the flour, baking Soda, and salt. Set aside.
  3. In a large bowl, Beat the butter and sugar together at medium speed until light and fluffy (2-3 minutes ).
  4. Add the vanilla and egg and continue to beat until well blended.
  5. Slowly add the flour mixture and mix till everything is combined.
  6. The dough will be very thick.
  7. With a large wooden spoon, stir in 1 3/4 cups of the oatmeal. I used my hands to make sure the oats were really incorporated into the dough.
  8. Press about 2/3 of the dough into prepared pan.
  9. Spread the jam over the base. Try not to get too close to the edges of the pan or else it will burn.
  10. Add the remaining 1/4 cup of oats to the dough in the bowl and mix well. Crumble the mixture over the jam. Bake for 25-30 minutes or when the oats begin to turn a deeper shade of gold.
  11. Remove from oven and cool completely before serving.
