Italian Pasta Salad
- 8 ounces truRoots Ancient Grains Organic Elbows
- 6 ounces pepperoni stick diced
- 6 ounces provolone cheese cubed
- 1 cup celery thinly sliced
- 1/2 cup red onion chopped
- 1/2 cup radishes small, sliced
- 1 pint grape tomatoes halved
- 1 cup broccoli florets small, heavy stems removed
- 2 1/4 ounces sliced black olives drained
- 1 cup Italian salad dressing prepared, or Balsamic salad dressing, divided
- salt
- pepper
- COOK pasta according to package directions. Drain.
- COMBINE pasta, pepperoni, cheese, celery, onion, radishes, tomatoes, broccoli, olives and 1/2 cup salad dressing in large bowl until well combined. Chill.
- TOSS with remaining 1/2 cup salad dressing just before serving. Season to taste with salt and pepper, if desired.
