Chicken Hamburgers With Coleslaw
- 2 boneless, skinless chicken breasts medium, cubed
- 1 tablespoon mustard
- 1 teaspoon garlic powder
- 1 tablespoon prepared salsa spicy
- salt and ground black pepper
- 1/4 cup cheddar cheese shredded
- 3 tablespoons light mayonnaise
- 1 lime
- 1 tablespoon prepared salsa spicy
- 1 tablespoon parsley minced
- 1 tablespoon cilantro minced
- 1/4 red cabbage finely shredded
- 1/2 red bell pepper diced
- 2 hamburger buns
- Finely grind the chicken. Place it in a bowl with the mustard, garlic, salsa, cheese, salt, and pepper. MIx well, divide into 2 equal parts, form into patties, and cook in a skillet until golden brown on both sides and cooked through.
- Heat the hamburger buns and place a burger in each.
- Prepare the salad by mixing the mayonnaise, lime juice, salsa, parsley, and cilantro together in a salad bowl. Add the cabbage and pepper and mix to combine. Refrigerate until serving.
- Top the burgers with the coleslaw and serve.
