Potato Skins
- 5 potatoes scrubbed, cut into wedges
- 1/4 cup oil
- 1 ounce cheddar cheese grated
- salsa
- 1 avocado finely chopped
- 2 ounces roasted red peppers, drained finely chopped
- 1 spring onion finely sliced
- 1 lime juiced
- 1 1/4 cups sour cream to serve
- 1/4 cup sweet chili sauce to serve
- Preheat oven to 400u0b0F. Line a baking dish with foil.
- Using the tip of a knife, slice potato away from flesh, leaving a little potato on skin. Coat in oil and season. Place, skin-side up, on a wire rack in the baking dish. Bake for 20-25 mins, until browned and crisp. Turn over and sprinkle with cheese.
- Increase oven to 425u0b0F. Bake potato skins for another 4-5 mins, until cheese melts.
- Meanwhile, to make the salsa, combine all salsa ingredients. Set aside.
- Combine sour cream and chili sauce in a bowl. Set aside.
- Serve potato skins with salsa and sour cream mixture.
