Shrimp And Broccoli Quiche
- 1/2 c. frozen cut broccoli
- 3 beaten eggs
- 1 1/2 c. milk
- 3 Tbsp. sliced green onion
- 2/3 c. chopped, cooked fresh or frozen shrimp
- 1 1/2 c. shredded Swiss cheese (6 oz.)
- 1 Tbsp. all-purpose flour
- 1 (9-inch) pie shell
- Thaw and drain broccoli; set aside.
- Stir together beaten eggs, milk and green onions; stir in shrimp.
- Toss together shredded Swiss cheese and flour; stir into egg mixture.
- Stir in the broccoli.
- Bake the pie shell in a 450u0b0 oven for 5 minutes until pastry is nearly done.
- Remove pastry from oven and reduce oven temperature to 325u0b0.
- (If necessary, cover edge of crust to prevent overbrowning while baking.)
- Pour mixture into the hot baked pie shell and bake in a 325u0b0 oven for 40 to 45 minutes or until a knife inserted between center and edge comes out clean. Let quiche stand 5 to 10 minutes before serving.
- Serves 6.
