Pumpkin Filled Oatmeal Cookies

  1. Cream lard and brown sugar until light and fluffy
  2. Beat in egg and molasses
  3. In a second bowl, combine oats, flour, salt and baking soda
  4. Stir into creamed mixture
  5. Cover and chill for 15 minutes
  6. In a saucepan, combine pumpkin, white sugar, cinnamon, ginger and nutmeg.
  7. Cook and stir until bubbly, allow to cool
  8. Remove dough from fridge and roll out to 1/8 inch thick.
  9. Place 1 tsp filling in center of 18 of the circles
  10. Cut into 36 3 inch circles(I use a donut cutter)
  11. Place 1 teaspoon filling in center of 18 circles.
  12. Cover each with remaining circles, press fork around edges to seal each one.
  13. Bake 375 for 12-15 minutes
