Pumpkin Filled Oatmeal Cookies
- 3/4 cup lard
- 1/2 cup brown sugar
- 1 egg
- 1/4 cup molasses
- 1 cup oats
- 2 cups flour
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup pumpkin
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon nutmeg
- Cream lard and brown sugar until light and fluffy
- Beat in egg and molasses
- In a second bowl, combine oats, flour, salt and baking soda
- Stir into creamed mixture
- Cover and chill for 15 minutes
- In a saucepan, combine pumpkin, white sugar, cinnamon, ginger and nutmeg.
- Cook and stir until bubbly, allow to cool
- Remove dough from fridge and roll out to 1/8 inch thick.
- Place 1 tsp filling in center of 18 of the circles
- Cut into 36 3 inch circles(I use a donut cutter)
- Place 1 teaspoon filling in center of 18 circles.
- Cover each with remaining circles, press fork around edges to seal each one.
- Bake 375 for 12-15 minutes
