Apple Upside-Down Cake

  1. Preheat oven to 375u0b0.
  2. Melt 1/4 cup butter in an 8-inch square pan.
  3. Add brown sugar and spices; mix well.
  4. Arrange apple rings over brown sugar mixture.
  5. Sprinkle with lemon juice.
  6. Combine dry ingredients in large bowl.
  7. Add 3 tablespoons butter and cut to resemble coarse crumbs.
  8. Add milk and vanilla; beat at low speed until moistened.
  9. Beat at medium speed for 2 minutes.
  10. Blend in egg yolk.
  11. Beat egg white in small bowl until stiff peaks form; fold into batter.
  12. Pour over apples.
  13. Bake 35 minutes or until wooden pick inserted in center comes out clean.
  14. Cool in pan on wire rack for 5 minutes.
  15. Loosen edges and invert onto serving plate.
  16. Let stand 1 minute before removing pan.
  17. Serve warm.
