Apple Upside-Down Cake
- 1/4 c. plus 3 Tbsp. butter, divided
- 1/2 c. packed brown sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground mace
- 3 McIntosh apples, peeled, cored and sliced into thin rings
- 2 tsp. lemon juice
- 1 1/3 c. cake flour
- 3/4 c. sugar
- 1 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 c. milk
- 1 tsp. vanilla
- 1 egg, separated
- Preheat oven to 375u0b0.
- Melt 1/4 cup butter in an 8-inch square pan.
- Add brown sugar and spices; mix well.
- Arrange apple rings over brown sugar mixture.
- Sprinkle with lemon juice.
- Combine dry ingredients in large bowl.
- Add 3 tablespoons butter and cut to resemble coarse crumbs.
- Add milk and vanilla; beat at low speed until moistened.
- Beat at medium speed for 2 minutes.
- Blend in egg yolk.
- Beat egg white in small bowl until stiff peaks form; fold into batter.
- Pour over apples.
- Bake 35 minutes or until wooden pick inserted in center comes out clean.
- Cool in pan on wire rack for 5 minutes.
- Loosen edges and invert onto serving plate.
- Let stand 1 minute before removing pan.
- Serve warm.
