Gazpacho

  1. In a large bowl, combine vegetables and garlic. Add bread, olive oil, vinegar, chili and sugar. Cover with 1/2 cup water. Season. Cover with plastic wrap and chill for at least 3 hours.
  2. Transfer mixture to a food processor or blender along with 3.5 oz ice cubes and process until smooth. Strain then pour into serving glasses.
  3. Serve topped with a little tomato, pepper, onion and mini croutons.
