Fresh Orange And Dried Cranberry Oatmeal Muffins With Walnuts

  1. Pre-heat your oven to 375 degrees.
  2. Zest the entire orange and squeeze 1/3 cup juice from it.
  3. Add the zest and juice to a small bowl.
  4. Add the buttermilk, yogurt, butter and egg to the bowl and whisk everything together.
  5. Add the oatmeal and let rest for about 15 minutes while preparing the other ingredients.
  6. Add the flour, baking powder, baking soda, sugar, cinnamon and salt to a medium-sized bowl and whisk together.
  7. Chop both the walnuts and cranberries into small pieces, so you can get a piece in almost every bite.
  8. After the oatmeal mixture has had a chance to soften, add it to the dry ingredients.
  9. Stir the mixture together being careful not to over mix.
  10. Fold in the walnuts and cranberries.
  11. Using a 1/4 cup measure or a scoop, evenly divide the batter between 12 paper lined muffin cups. I use "Unbleached Totally Chlorine-Free (TCF)" liners to bake in and then place my muffins in decorator papers for serving.
  12. Sprinkle a tiny bit of sugar on top of each muffin.
  13. Bake for approximately 15 minutes depending on your oven. Check that a toothpick inserted into the muffin comes out clean.
  14. Remove from the oven and let sit in the muffins cups for about 5 minutes, then move to a wire rack.
