Taco Soup
- 1 pound extra lean ground beef 93% lean
- 1 can rotel tomatoes
- 2 cans tomato sauce
- 1 can red kidney beans dark
- 1 can pinto beans
- 1 can black beans
- 1 can corn whole kernal
- 1 can cream-style corn
- 2 cans chicken broth
- 1 package taco seasoning
- 1 package ranch dip mix
- 1 onion medium, chopped
- 8 ounces shredded cheddar cheese
- 8 ounces sour cream
- 1 bag tortilla chips
- Brown ground beef in a dutch oven pot that can hold all of the ingredients. Add onions so they can soften.
- Open all of the cans (do not drain) and dump into the pot with the ground beef. Stir the soup.
- Add the taco seasoning and the ranch dip mix to the soup and stir.
- Bring the soup to a boil, and then set to a low simmer. Simmer for 20-30 minutes stirring occassionally.
- Serve with cheese, sour cream, and tortilla chips as garnish.
