Nasi Goreng

  1. Heat 1 tbsp oil in a wok. Stir-fry pork, in batches, until browned. Set aside. Add 1 tbsp oil and stir-fry onion, pepper, chilies, garlic, ginger and shrimp paste until fragrant and softened. Add prawns and stir-fry until pink. Add rice and stir-fry for 1 min. Return pork to pan, along with 4 green onions and sweet soy sauce. Toss to coat.
  2. Meanwhile, heat remaining oil in a large frying pan. Cook eggs, sunny side up, until whites are set. Remove from pan and cover to keep warm.
  3. Distribute rice between serving plates, add a sunny-side up egg and sprinkle with peanuts and remaining green onions. Serve.
