Nasi Goreng
- 3 tablespoons peanut oil
- 8 3/4 ounces pork loin thinly sliced
- 1 onion medium, thinly sliced
- 1 red pepper medium, thinly sliced
- 3 red chilies fresh long, thinly sliced
- 3 cloves garlic thinly sliced
- 2 inches fresh ginger thinly sliced
- 1 teaspoon shrimp paste
- 8 3/4 ounces prawns small raw, peeled
- 1 1/4 pounds long grain white rice cold cooked
- 6 spring onions thinly sliced
- 1 tablespoon sweet soy sauce
- 4 eggs
- 2 tablespoons unsalted roasted peanuts toasted, chopped
- Heat 1 tbsp oil in a wok. Stir-fry pork, in batches, until browned. Set aside. Add 1 tbsp oil and stir-fry onion, pepper, chilies, garlic, ginger and shrimp paste until fragrant and softened. Add prawns and stir-fry until pink. Add rice and stir-fry for 1 min. Return pork to pan, along with 4 green onions and sweet soy sauce. Toss to coat.
- Meanwhile, heat remaining oil in a large frying pan. Cook eggs, sunny side up, until whites are set. Remove from pan and cover to keep warm.
- Distribute rice between serving plates, add a sunny-side up egg and sprinkle with peanuts and remaining green onions. Serve.
