Chicken Dijon
- 1/3 c. Dijon mustard
- 2 Tbsp. honey
- 2 Tbsp. lime juice
- 1 Tbsp. water
- 1 1/2 tsp. grated lime peel
- 4 skinless, boned chicken breasts
- lettuce leaves
- Preheat oven to 350u0b0.
- Whisk together mustard, honey, lime juice, water and lime peel.
- Place chicken in shallow ovenproof casserole. Set aside 1/4 cup mustard sauce.
- Pour remaining sauce on chicken. Cover and bake 20 minutes.
- Uncover.
- Spoon sauce from casserole on top and continue to bake, uncovered, for 10 minutes or until completely cooked.
- Arrange chicken on lettuce leaves. Add 2 to 4 tablespoons of remaining sauce from casserole to reserved sauce and heat through.
- Pour over chicken and serve. Serves 4.
- Preparation time is 15 minutes. Cooking time is 30 minutes.
