White Chocolate Lemon Muffins

  1. Preheat the oven to 160 degrees Celsius.
  2. Line a muffin tin or grease and flour each individual mold.
  3. Beat together the sugar and butter until creamy and lighter in color.
  4. Add the egg, milk, and lemon zest. Stir until combined.
  5. Sift together the flour, salt, baking powder, and ginger (optional). Stir into the first mixture until the dry ingredients are just absorbed.
  6. Add the lemon juice, stir, and then add the white chocolate.
  7. Pour the batter into the muffin tin and bake 20 minutes.
