Hawaiian Curry*
- 3 c. milk
- 2 c. freshly grated coconut
- 3 cloves garlic, chopped finely
- 1 Tbsp. fresh ginger root, chopped finely
- 2 apples, cored and sliced
- 2 medium onions, chopped medium
- 2 Tbsp. curry powder
- 1/2 c. butter, softened
- 1/2 c. enriched flour
- 1/2 tsp. salt
- 1/2 c. heavy cream
- 2-3 c. cooked meat of choice - chicken, shrimp, or other meat and cut into bite-sized pieces
- Add milk to the grated coconut and bring mixture to a simmering temperature.
- Add garlic, ginger, apples and onions to mixture.
- Blend curry powder with 2 tablespoons of butter.
- Add curry powder and butter mixture to the coconut mixture and cook slowly for three hours, stirring occasionally.
- Remove mixture from heat and let stand in a cool place for several hours or until the next day.
