Spicy Lentil Soup
- 1 tablespoon oil
- 2 onions peeled and finely chopped
- 1 fresh root ginger walnut-sized piece, peeled and finely chopped
- 2 cloves garlic peeled and finely chopped
- 2 5/8 cups red lentils
- 1/2 teaspoon curry powder plus extra for sprinkling
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cardamom
- 10 5/8 cups vegetable stock
- 8 tablespoons greek yogurt
- 4 tablespoons fresh flat leaf parsley chopped
- Heat the oil in a saucepan and saute the onions, ginger and garlic for 2 mins. Add the lentils, curry powder, cumin and cardamom and saute for 1 min. Pour in the stock and bring to a boil. Simmer over a low heat for 15 mins, stirring frequently. Season with salt and black pepper.
- Ladle into bowls, top each with 1 tbsp yogurt and swirl. Sprinkle with parsley and curry powder.
