Chocolate Sourdough Cake
- 8 1/2 ounces sourdough starter "fed"
- 8 ounces whole milk warm
- 8 1/2 ounces all purpose flour sifted
- 7 ounces vegetable oil
- 2 teaspoons vanilla extract
- 10 1/2 ounces sugar
- 1 teaspoon salt
- 1 1/2 teaspoons baking soda
- 2 1/4 ounces unsweetened baking cocoa
- 1 teaspoon extract espresso
- 2 large eggs
- 15 ounces dark chocolate
- 15 ounces cream
- Mix sourdough, milk and flour together
- Combine vegetable oil, vanilla extract, sugar, salt, baking soda, baking cocoa, espresso extract and eggs
- Combine the two mixtures in large bowl and mix well
- Scoop 2 ounces of mixture into sprayed baking rings or cupcake pan
- Bake at 350 for 18 minutes
- To make ganache, scald the cream and pour over chocolate. Whisky together while warm.
- Cover each cake in 2 ounces of warm ganache
