Sweet Mascarpone Sandwiches

  1. Place the milk, strong flour, all purpose flour, cocoa, egg, butter, salt, sugar, and yeast in the bread machine bowl. It is also possible to knead the ingredients by hand or with a mixer for approximately 10 minutes and then let rise until the dough doubles in size.
  2. Set the bread machine to the kneading function.
  3. Add the chocolate chips.
  4. When the cocoa bread is done, let it cool completely. Or if not using a bread machine bake the bread for approximately 40 minutes at 190 degrees Celsius and let cool.
  5. Place the egg yolks and the sugar in the mixer bowl and beat for 2 minutes.
  6. Add the mascarpone cheese by the spoonfuls into the bowl, while continuously beating.
  7. Beat for an additional 2 minutes, the mixture should be creamy.
  8. Incorporate the Vin Santo.
  9. Refrigerate for a few hours before serving.
  10. Cut the cocoa bread into 1/2 centimeter thick slices.
  11. Spread the slices with a generous amount of mascarpone cream.
  12. Pair two slices together and slice the sandwich diagonally.
  13. Serve.
