Arroz Con Pollo(Chicken With Rice)
- 1 (3 lb.) frying chicken, cut in pieces
- 1/2 cup salad oil
- 1 medium sweet onion, diced
- 1 medium sweet green pepper, diced
- 2 tomatoes, diced
- 1 clove garlic, chopped
- 1 1/2 cups uncooked rice
- 4 cups boiling water or chicken broth
- 1/8 tsp. saffron
- 1 tsp. salt
- Shake chicken in seasoned flour, fry in oil till brown.
- Cover and cook about 10 minutes longer.
- Remove.
- Saute onion and pepper in same oil.
- Add tomatoes and garlic and cook together to blend seasonings.
- Stir in uncooked rice and let cook a few minutes.
- Mix all ingredients carefully to blend fully.
- Pour boiling water into mixture, add salt and saffron, blend thoroughly and cook about 3 minutes more.
- Put in casserole and arrange pieces of fried chicken on top of rice mixture.
- Bake uncovered 20-30 minutes at 350u0b0 until rice is done.
- Rice should not be mushy.
