Friendship Cake
- 1 c. butter or margarine, melted
- 1 3/4 c. sugar
- 3 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. ground cloves
- 1/4 tsp. ground nutmeg
- 2 eggs
- 2 c. drained brandied fruit
- 1 c. chopped pecans
- 1/4 c. brandied fruit juice
- powdered sugar (optional)
- Combine butter and sugar in large bowl.
- Beat well.
- Add eggs, beat well.
- Coarsely chop brandied fruit and stir into batter.
- Add pecans and juice; mix well.
- Pour batter into a greased and floured 10-inch Bundt pan.
- Bake at 350u0b0 for one hour.
- Cool in pan 10 minutes; remove from pan and cool completely on wire rack. Sprinkle with powdered sugar if desired.
