Cornbread
- 5 5/8 tablespoons water
- 1 1/4 teaspoons yeast dried
- 6 3/8 tablespoons flour
- 1 teaspoon sugar
- 1 cup water
- 2 9/16 cups corn flour
- 2 1/4 tablespoons olive oil
- 1 teaspoon salt
- 6 2/3 tablespoons wheat flour
- Mix all the ingredients in the food processor, until a dough ball is formed.
- Remove from processor, place in bowl, cover with a clean cloth, and wait until dough doubles in size.
- Mix the water and corn flour in the food processor. Remove the processor bowl from the base, and let cool.
- When the dough is cool, add the yeast dough, olive oil, salt, and wheat flour. Mix for 4 to 5 minutes until a ball is formed.
- Remove the dough, sprinkle with flour, make a ball, place in baking pan sprinkled with flour, cover with a clean cloth, and let rise to double in size.
- Preheat oven to 200 degrees Celsius.
- Bake for about 50-60 minutes.
