Golden Cod With Baked Peppers
- 1 cod pack, migas, soaked and shredded
- 1 9/16 pounds potato straws
- 1 onion chopped
- 1 garlic clove chopped
- 5 eggs
- chopped parsley
- 1 red pepper
- olive oil
- salt
- ground black pepper
- Slightly scald the cod, drain, and set aside.
- Fry the potatoes, drain on paper towels.
- Grill the pepper, cut into strips, set aside.
- Heat a large skillet with onion, garlic, and little olive oil.
- When the onion is translucent and golden, add the cod, and cook for a few minutes.
- Beat eggs with chopped parsley, reserving some for the garnish.
- Season with salt and pepper.
- Add the potatoes to the cod, mix well.
- Add eggs, stir, and cook to taste.
- To serve, garnish with strips of roasted peppers and chopped parsley. Accompany with a salad.
