Golden Cod With Baked Peppers

  1. Slightly scald the cod, drain, and set aside.
  2. Fry the potatoes, drain on paper towels.
  3. Grill the pepper, cut into strips, set aside.
  4. Heat a large skillet with onion, garlic, and little olive oil.
  5. When the onion is translucent and golden, add the cod, and cook for a few minutes.
  6. Beat eggs with chopped parsley, reserving some for the garnish.
  7. Season with salt and pepper.
  8. Add the potatoes to the cod, mix well.
  9. Add eggs, stir, and cook to taste.
  10. To serve, garnish with strips of roasted peppers and chopped parsley. Accompany with a salad.
