Apple Rings From Large Cucumbers
- 2 gal. cucumbers, sliced with rind and seeds removed to make circles or rings
- 2 c. lime
- 8 1/2 qt. water
- 1 c. brown sugar
- 1 oz. red food coloring
- 1 Tbsp. alum
- water to cover
- 2 1/2 c. vinegar
- 2 1/2 c. water
- 3/4 c. red hots
- 6 sticks cinnamon
- 12 1/2 c. sugar (5 lb.)
- Mix first three ingredients.
- Let stand 24 hours.
- Drain; wash well and let stand in cold water for 3 hours.
- Mix next 4 ingredients and pour over cukes.
- Simmer for 2 hours.
- Drain.
- Mix next 5 ingredients and bring to boil.
- Pour over cukes for 3 days. Each day reheating syrup to a boil.
- On third day, put cukes into jars; heat syrup and pour over them.
- Seal.
- Makes 7 pints.
- Store in refrigerator and use as pickles.
