Apple Rings From Large Cucumbers

  1. Mix first three ingredients.
  2. Let stand 24 hours.
  3. Drain; wash well and let stand in cold water for 3 hours.
  4. Mix next 4 ingredients and pour over cukes.
  5. Simmer for 2 hours.
  6. Drain.
  7. Mix next 5 ingredients and bring to boil.
  8. Pour over cukes for 3 days. Each day reheating syrup to a boil.
  9. On third day, put cukes into jars; heat syrup and pour over them.
  10. Seal.
  11. Makes 7 pints.
  12. Store in refrigerator and use as pickles.
