Meatballs In Sauce

  1. Cook the peas for 10 minutes in salted boiling water.
  2. Drain and refresh under cold water.
  3. Set aside.
  4. Cook the rice.
  5. Peel and chop onion and garlic coarsely.
  6. Place them in a food processor.
  7. Add ground meat, sausage meat, egg, parsley, paprika and a pinch of salt.
  8. Mix until you have a soft but not wet stuffing.
  9. Use the mixture to shape balls the size of a large walnut between your palms.
  10. In a skillet, heat the olive oil and cook over low heat without drying them out.
  11. Place them on a plate and keep them warm.
  12. Keep the meatballs cooking juices in the pan.
  13. Pour the flour into the pan and heat over low heat, stirring with a whisk.
  14. Gradually add the broth and thicken to form a roux.
  15. Add pepper and the small cooked peas.
  16. Serve the meatballs with the rice and pea sauce.
