Meatballs In Sauce
- 7/8 pound ground beef
- 7 ounces sausage meat
- 1 3/8 cups peas fresh or frozen
- 1 onion
- 1 garlic clove
- 1 egg
- 3 tablespoons chopped parsley
- 1 tablespoon paprika Murcia, paprika
- 1 tablespoon flour
- 20 broth cl of
- 3 tablespoons olive oil
- salt
- pepper
- bomba rice
- Cook the peas for 10 minutes in salted boiling water.
- Drain and refresh under cold water.
- Set aside.
- Cook the rice.
- Peel and chop onion and garlic coarsely.
- Place them in a food processor.
- Add ground meat, sausage meat, egg, parsley, paprika and a pinch of salt.
- Mix until you have a soft but not wet stuffing.
- Use the mixture to shape balls the size of a large walnut between your palms.
- In a skillet, heat the olive oil and cook over low heat without drying them out.
- Place them on a plate and keep them warm.
- Keep the meatballs cooking juices in the pan.
- Pour the flour into the pan and heat over low heat, stirring with a whisk.
- Gradually add the broth and thicken to form a roux.
- Add pepper and the small cooked peas.
- Serve the meatballs with the rice and pea sauce.
