Double Cheese Souffle With Spiced Pear
- 1 tablespoon butter
- 2 tablespoons plain flour or buckwheat flour
- 9/16 cup goat's cheese chopped
- 4 tablespoons Parmesan cheesee, grated
- 1 tablespoon chives chopped
- 2 eggs separated
- 1/2 cup soy milk
- 1 pinch salt and pepper
- 1 pear organic
- 1 tablespoon honey
- 1/2 teaspoon spices mixed ground
- Preheat the oven to 150'c fan force and grease the souffle dishes with butter.
- On low heat, melt butter in a saucepan for a minute. Stir in the flour and cook for one minute. Gradually add the milk. Keep stirring all the time until the sauce is thickened. Continue cooking for two minutes.
- Add cheeses. chives and egg yolks. Season with salt and pepper. Remove from heat.
- Beat egg whites untill stiffy. Fold in the whipped egg whites into the cheese mixture in two additions. Spoon the mixture into the dishes.
- Bake them for 12 minutes - watch them rise!
- In the meantime, make spiced pear - on low heat, pour honey into a clean saucepan. Add in mix spices. Cook the pear both sides for about 5 minutes.
