Pasta With Zucchini, Artichoke, And Chicken

  1. Cook the pasta in salted, boiling water for about 8 to 10 minutes. Drain the pasta and set aside.
  2. Add the oil to a skillet on medium heat and saute the chicken for a few minutes, stirring often.
  3. Add the zucchini to the skillet and saute for a few minutes. Set aside.
  4. In a bowl, mix the vinegar, olive oil, and a pinch of salt and black pepper, together to make the dressing.
  5. Add the pasta into the bowl with the zucchini and chicken. Add the dressing and mix everything well.
  6. Top with artichokes and serve.
