Zucchini Stuffed With Bush

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Clean the zucchini, and cook for 12 minutes in a pan of boiling salted water.
  3. Drain and let cool.
  4. Cut the "hat" of each zucchini.
  5. With a spoon, scrape out each zucchini, being careful not to pierce the vegetable.
  6. Remove all the seeds.
  7. In a bowl, mix the egg with the chopped herbs, crumbled bush, cream, shallots, and salt and pepper.
  8. Stuff each zucchini with a spoon, then put the cap on each zucchini.
  9. Place the zucchini in a baking dish and bake for about 15 minutes.
