Zucchini Stuffed With Bush
- 4 zucchini round
- 4 3/8 cups cheese Brousse
- 1 egg
- 6 mint sprigs
- 1/2 bunch basil
- 1/2 bunch coriander
- 4 tablespoons heavy cream
- 1 shallot finely chopped
- salt
- ground black pepper
- Preheat oven to 425 degrees Fahrenheit.
- Clean the zucchini, and cook for 12 minutes in a pan of boiling salted water.
- Drain and let cool.
- Cut the "hat" of each zucchini.
- With a spoon, scrape out each zucchini, being careful not to pierce the vegetable.
- Remove all the seeds.
- In a bowl, mix the egg with the chopped herbs, crumbled bush, cream, shallots, and salt and pepper.
- Stuff each zucchini with a spoon, then put the cap on each zucchini.
- Place the zucchini in a baking dish and bake for about 15 minutes.
