Skinny Pasta Sauce

  1. In a large skillet, brown your ground turkey meat over medium high heat. Once browned, remove meat from pan and set aside.
  2. In the same skillet on medium heat, heat olive oil and then add minced garlic. Saute garlic until lightly brown. Then add your onions, mushrooms and diced tomatoes. Cook veggies until onion has turned translucent.
  3. In your skillet add meat back to your veggie mixture. Then add tomato sauce and all the remaining seasonings. Cover sauce and cook on medium heat for thirty minutes. Stir occasionally. If your sauce starts to thicken add water to keep the sauce-y consistency.
  4. Remove from heat and serve immediately. This is dish is best served on a warm bed of whole-wheat organic spaghetti noodles. If you're on a no-carb diet I would place the sauce on top of a bed of zoodles or roasted sliced eggplant. Then garnish with freshly chopped parsley and shredded parmesan cheese.
