Herb-Crusted Lamb Chops
- 4 tablespoons olive oil
- 2 tablespoons fresh thyme leaves chopped
- 1 red chili long, finely chopped
- 2 cloves garlic minced
- 1 teaspoon lime zest
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup
- 8 lamb chops trimmed
- 1 tablespoon red wine vinegar
- 4 1/2 ounces snow peas trimmed, halved
- 5 1/4 ounces frozen peas blanched
- 2 ounces pea shoots
- 1/4 cup fresh mint leaves
- 2 ounces goat cheese crumbled
- Combine 2 tbsp oil, thyme, chili, garlic, lime zest, mustard and maple syrup. Coat lamb chops. Heat a frying pan over high heat, cook lamb 2-3 mins per side, or until cooked to your liking.
- Meanwhile, whisk together remaining oil and red wine vinegar. Toss with remaining ingredients. Season. Serve with lamb chops.
