Banana Nut Bread
- 3 c. sifted flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3/4 c. butter
- 1 1/2 c. sugar
- 2 eggs, well beaten
- 1/3 c. nonfat dry milk
- 1/3 c. water
- 2/3 c. mashed ripe banana
- 1 c. chopped pecans
- Preheat oven to 350u0b0.
- Butter 2 (8 1/2 x 4 1/2 x 3-inch) loaf pans.
- Sift together flour, baking powder, baking soda and salt. Cream butter; add sugar gradually, beating until light and fluffy. Beat in eggs.
- Beat nonfat dry milk, water and bananas until mixed well.
- Add alternately with dry ingredients to creamed mixture, starting and ending with dry ingredients.
- Blend well after each addition.
- Fold in nuts.
- Turn into pans and bake 50 minutes.
- Remove from pan and cool on a wire rack.
